Every mouth-watering dish at our Italian signature restaurant Olive reflects the passion, experience and commitment of Chef de Cuisine Vincenzo Sorrentino. This elegant restaurant, with its air conditioned and al fresco seating options, offers an impressive selection of fine cuisine based upon traditional recipes that use authentic ingredients from every region in Italy. Naturally, the restaurant's wine cellar features old and new world wines that complement perfectly every dish.

The open kitchen sets the scene for truly memorable dining experiences with the beachfront deck providing a stunning venue for sunset cocktails and aperitifs. The restaurant also boasts an ever-growing collection of monocultivar olive oil. Each oil is made solely from a single variety of olive harvested during Italy's autumn season, with every drop bringing an added and very distinctive flavor. Chef Vincenzo is pleased to host private degustation classes featuring quality Italian ingredients and wines.
